All Things Good!

So this entry will be kind of well eclectic but all good.


First I want to share with you a little bit about how we usually start our day.
Beau and I love to take peaceful contemplative walks in the morning.
I sometimes bring tunes and place speakers under the stroller so we can
both enjoy the music. . . Beau loves music. Other times I just take the opportunity to teach Beau
about the world around her until she falls asleep. I then take time to give my
gratitude to my Heavenly Father for my perfect life. There is something sacred
about being outside and just looking at the nature view sounds and smells. We always end
at the house with some yoga stretches and some artistic chalk time. It is so nice to leave the
noise of life behind sometimes.













I then come in and Beau takes a nap and I get cleaning done, fill the snack bowl
and think about the one recipe for the day I will make. Last week Beau helped to make Pesto
from our enormous Basil plant. Could she get any cuter!

The snack bowl is a little wooden four compartment bowl that I put four different
healthy organic snacks in. This way I know my family, and especially the kids will
grab for good snacks, like jicama, celery, almonds, almond butter, fruits, veggie crisps,
rice cakes, soybeans or whatever I have on hand. I also have been experimenting with
gluten and dairyfree low sugar treats.

CharLee News:He has really progressed in his art skills. He surprised me one day and showed me
some portraits he'd been working on. I could not believe how good they were.
I guess it is time to start teaching him again. He could probably handle charcoal now.
He also started Ballroom with his long time friend Aspyn this week.
He danced with his little six year old partner for two hours. Lets just say, he was beaming
afterwards. CharLee is so talented. . .

The Luvs:We went to the BYU game with the bishop this weekend. It was so nice to be able
to spend time with Matthew and leave the work stress behind for a few moments.
These are the times I cherish. . .just to be with him is so satisfying. Great game, BYU 59-0!



Recipe of the week:My family loves these, we make a bunch and freeze them. Alena this is the recipe that will help
your dad heal.


Seed Pancakes:

This combination of seeds guarantees a good intake and ratio of essential fats.

Note: Using healthy fats to burn on (for energy) is better fuel than burning on sugars, which causes more fermentation and lactic acids.

Make sure you start with very fresh organic raw seeds and nuts
(order from Jaffe Bros. www.OrganicFruitsandNuts.com or call 1-760-749-1133 to order).

Preparation: Measure out seeds and mix together:
1/4 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
1/4 cup raw sesame seeds
1/2 cup raw flax seeds

In a coffee grinder, grind the seeds to flour in 1/3 cup batches. (or grind all at once in your Vita Mix blender to flour)

Measure out one cup and put in a bowl for the pancake recipe. Store the rest in fridge or freezer for another time.

Ingredients:
1 cup seed flour
1 cup millet or spelt flours, or a combination of other (quinoa, amaranth, buckwheat, bean flour)
1 & 1/2 tsp. baking soda
1 tsp. Real Salt
optional: 1/16th tsp. Stevia
Soymilk (unsweetened) or water to make the right consistency (batter thickens after sitting a couple of minutes)

Directions: Pour or spoon batter into a fry pan and cook in Olive, Coconut, or Grapeseed oil, on both sides. Buckwheat Pancakes

variation: Use 2 cups of buckwheat (made from raw buckwheat kernels) for the flour and follow same directions for seed pancakes.

Anything Pancakes Any combination of flours (seed, nut, grain, bean) follow same directions for seed pancakes.

Pancake Whipped Topping
1/2 carton soft tofu
1/3 cup Thai coconut milk
1/2 tsp. Frontier non-alcohol vanilla,
1/8th tsp. white Stevia powder
1 TB. fresh lemon juice

Whip in blender and serve over seed pancakes.
Keep cold in fridge YUM!!!!!!!!!!!

New Pics of the Kids & Recipe for the Week


So I finally took some new pics of the kids for 2008.
Isabeau was sweet for the first few minutes and then,
well you can see... CharLee is charming as ever! Love you
my children.

My sweet neighbor asked me for the Gazpacho recipe so
here it is:

4-5 garden tomatoes
1 unpeeled garden cucumber
1 bell pepper (any color)
1/2 lime juiced
1 tsp real salt (Redmond Salt. . . the best!)
1/4 tsp cumin
1/4 tsp ceyenne
1/2 cup olive oil
6-8 ice cubes

Put in a good blender and blend away.
This is my favorite fall harvest recipe
my Mom had it in Spain and spred the
greatness along
Add some chopped avocado and a
sprouted wheat tortilla(Ezekial brand) on the side
for a little something extra yummy.

All New Things

So here are the 4 new things:
#1 I am reading the Twilight of which many have told me I should.
I am intrigued because of authors story of how it came
about. I feel Matthew has been similarly inspired in
writing his novel/series. One day he too will fulfill his
dream. You go my Luv.
#2 I figured out how to make a very tasty non dairy non gluten
zucchini bread for CharLee of which Matthew even said he enjoyed.
If anyone wants the recipe let me know.
#3 I bought some bottles and a canner; and as of right now
I am bottling fresh tomatoes from our garden. This will
make for yummy veggie soup in the winter months to come.
Never thought I would ever bottle, but I am excited about it.
Arica if you want to bottle or some garden veggies let
me know, there is plenty.
#4 I am phasing Beau into cloth and biodegradable diapers. . .so
much better for the earth and the budget. More work but it is
worth it.

I guess I have been really motivated to do and accomplish things
myself and in a "All Natural" way of course. I really feel impowered
knowing that I can learn and take care of my family better. I love
progressing in this way as a mother. There is comfort in knowing
I can help my own family live a more healthy clean and balanced life.

CharLee's Birthday, Camping and More. . .


CharLee's Birthday, A Little Chefs Party!
CharLee this year desired to have a Ratitoulle themed B-day.
The day started with his requested cream of wheat with candles and Chocolate Silk.
Then I took balloons and a small treat to him at school.
His party then started at 4 when he arrived home from school.
We had all the kids make there own unique pizzas and then
had fruit pizza for dessert. We also had a fruit snack filled
pinata and a "guess what smell it is" game.
His highlight gifts were Camp Rock movie, thanks to Essa. Grandma Bee
gave him a humanitarian box in which he can make toys for kids
around the world and his Batman car from Daddy was also a hit. We missed you
Essa, Popeye and the rest of the family.


So we took a short trip to Ioka, Uintas this last weekend
for a Lisonbee/Nelsen Family campout.
It was good to see Grandma and Grandpa Cow
as we don't know how much longer they will be with us.
As for camping the first day was beautiful, and we were able to
play in the river. As for the rest of the camp out. . . it was not so much
fun but what an adventure. The last night the storm was so bad. It was
literally raining inside our tent. So a 2a.m. we decided to gather up Beau
and CharLee and make way for Grandmas house.

CharLee News:
CharLee is now officially off of all dairy and gluten and he is excited about
it. I told him he didn't have to do it since I know it was hard,
but the next morning he said, "Mom, we need to go through
the school menu and pick one day a week I can eat at school,
but it has to be dairy and gluten free." He also makes sure
I don't mess up making him his other meals. Way to go
Skippy (CharLee) you are so strong and brave.
He has also been enjoying his Baptism Book. Every night we
read a chapter. . . but he won't stop he insists on reading 3-4
chapters. Thus, we are almost finished. He says he wants
to read it again after we finish. CharLee is just a good boy
to the core. After school yesterday he told me how there
was some bully's at recess picking on some girls and he told
the boys to please stop. I knew even when CharLee was
very young, before he could talk, that he already had such
a pure sweet tender spirit.

Beau News:
Beau continues to todddle around. She is speaking more.
This morning I told her don't get in the dirt when we
walked CharLee to school and she said,"NNNNO, Dirt!"
She has also found her love for art. She especially loves to
color on the floors, highchair and the windows. Beau is
my little disaster girl. She leaves a blazing trail of mess
where ever she goes. This keeps me in shape. She is also
fond of dancing. She points to the ipod and reaches up for
Matthew and then takes his hand in dancers stance. I
don't know where she gets that from:) She melts Matthews heart
as they dance in the kitchen to some good Micheal Buble' tunes.
One thing she started doing is her love for being "Prettise" (Pretty).
She loves to pick out her clothes, hair barette, curler and also
jewelry for the day. She even has come out of my closet wearing
necklaces of mine I never wear. . . everyone knows how much I
love jewelry. Lets just say she is all girl. . . Everthing nice and a
little bit spice.

The Luvs:
Matthew and I are as in love as ever before. It was great sharing the non-ideal weekend
adventure with him. Work is going well and the prospects of new and exciting
opportunities are still a brew for him. I am just loving being a Mom and serving my family
the way I know best. Luvs, Kisses, healthy meals, story time, peaceful walks, art time,
cleaning time, dancing time and just vegging time.

I also started a cleanse this week. Today is day three and I am feeling much better. The first 2 days I was a little faint. I usually like to do this after I stop nursing to clean house and start
a new. Today for breakfast I had a "Limy" shake (thanks Essa) and for lunch
Gazpacho is in the plan and for dinner my garlic/onion/veg soup I made yesterday. Only 7 more days to go. . . and doing good! If anyone is interested it is from my parents book The pHMiracle; you can find it on Amazon. Thanks for all the knowledge Mom and Dad.

Beaus First Steps, Lagoon and CharLee starts First Grade


Summer flew by so fast. It is crazy to think that this time last year Beau was only 1 month old. Beau did take her first steps a few weeks after turning 1; however, she is not big on it. She still continues to warm our hearts. Something kinda cute is she has started to love to dance. She will point to the ipod and then reach up for Matthew or I to hold her. Then she will take our hand in dancers position. One night Matthew danced her to sleep. She also is talking quite a bit. She says, Mom, Dad, Gee Gee (CharLee), Puppy, Shoes, Ba Ba (bottle) and still has her spunky personality. I call her Punky Beauster. CharLee has grown up so much. He started school (first grade) on the 18th of August and is loving it. His favorite thing is the "school resturaunt" lunch time. I guess I have deprived him a bit and so he is loving the variety. He said he would promise to eat his veggies if I got him a lunch ticket like the other kids. I am missing him though. . . he goes to school at 8:45 and doesn't get home until about 4pm. Although, it has allowed me to get some deep cleaning done and spend one on one time with Beau. I am just grateful he loves school and is progressing well.













We also took a last minute trip to Lagoon as a family. It brought back many memories of going as kids. CharLee also completed level 2 swimming lessons a week ago. It was a fun busy summer but now its time to get back to the school schedule. We are looking forward to the holiday season. Love to all our family and friends.
