All Things Good!

So this entry will be kind of well eclectic but all good.


First I want to share with you a little bit about how we usually start our day.
Beau and I love to take peaceful contemplative walks in the morning.
I sometimes bring tunes and place speakers under the stroller so we can
both enjoy the music. . . Beau loves music. Other times I just take the opportunity to teach Beau
about the world around her until she falls asleep. I then take time to give my
gratitude to my Heavenly Father for my perfect life. There is something sacred
about being outside and just looking at the nature view sounds and smells. We always end
at the house with some yoga stretches and some artistic chalk time. It is so nice to leave the
noise of life behind sometimes.













I then come in and Beau takes a nap and I get cleaning done, fill the snack bowl
and think about the one recipe for the day I will make. Last week Beau helped to make Pesto
from our enormous Basil plant. Could she get any cuter!

The snack bowl is a little wooden four compartment bowl that I put four different
healthy organic snacks in. This way I know my family, and especially the kids will
grab for good snacks, like jicama, celery, almonds, almond butter, fruits, veggie crisps,
rice cakes, soybeans or whatever I have on hand. I also have been experimenting with
gluten and dairyfree low sugar treats.

CharLee News:He has really progressed in his art skills. He surprised me one day and showed me
some portraits he'd been working on. I could not believe how good they were.
I guess it is time to start teaching him again. He could probably handle charcoal now.
He also started Ballroom with his long time friend Aspyn this week.
He danced with his little six year old partner for two hours. Lets just say, he was beaming
afterwards. CharLee is so talented. . .

The Luvs:We went to the BYU game with the bishop this weekend. It was so nice to be able
to spend time with Matthew and leave the work stress behind for a few moments.
These are the times I cherish. . .just to be with him is so satisfying. Great game, BYU 59-0!



Recipe of the week:My family loves these, we make a bunch and freeze them. Alena this is the recipe that will help
your dad heal.


Seed Pancakes:

This combination of seeds guarantees a good intake and ratio of essential fats.

Note: Using healthy fats to burn on (for energy) is better fuel than burning on sugars, which causes more fermentation and lactic acids.

Make sure you start with very fresh organic raw seeds and nuts
(order from Jaffe Bros. www.OrganicFruitsandNuts.com or call 1-760-749-1133 to order).

Preparation: Measure out seeds and mix together:
1/4 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
1/4 cup raw sesame seeds
1/2 cup raw flax seeds

In a coffee grinder, grind the seeds to flour in 1/3 cup batches. (or grind all at once in your Vita Mix blender to flour)

Measure out one cup and put in a bowl for the pancake recipe. Store the rest in fridge or freezer for another time.

Ingredients:
1 cup seed flour
1 cup millet or spelt flours, or a combination of other (quinoa, amaranth, buckwheat, bean flour)
1 & 1/2 tsp. baking soda
1 tsp. Real Salt
optional: 1/16th tsp. Stevia
Soymilk (unsweetened) or water to make the right consistency (batter thickens after sitting a couple of minutes)

Directions: Pour or spoon batter into a fry pan and cook in Olive, Coconut, or Grapeseed oil, on both sides. Buckwheat Pancakes

variation: Use 2 cups of buckwheat (made from raw buckwheat kernels) for the flour and follow same directions for seed pancakes.

Anything Pancakes Any combination of flours (seed, nut, grain, bean) follow same directions for seed pancakes.

Pancake Whipped Topping
1/2 carton soft tofu
1/3 cup Thai coconut milk
1/2 tsp. Frontier non-alcohol vanilla,
1/8th tsp. white Stevia powder
1 TB. fresh lemon juice

Whip in blender and serve over seed pancakes.
Keep cold in fridge YUM!!!!!!!!!!!

Hi you guys! We miss you! I found your blog through Amber...I'm so sorry that we haven't gotten together sooner. We moved back to Alpine a few months ago. I canNOT believe how much your baby has grown! What a cutie! I've been thinking about you guys a lot...I love your blog...hopefully we can get together soon...
